PASTA AND MEATBALLS
MEAT LOAF
With penne pasta folded in, these loaves will
not be completely smooth. The best tool for
combining the ingredients is your hands so that
the pasta does not break up and crumble as it’s
mixed in. Substitute spaghetti for a more
kid-friendly variation.

INGREDIENTS
l/2
cup dried mini penne pasta (60 gm)
4
long individual-size ciabatta rolls
(found at good bakeries)
1
medium onion, chopped

cup chopped yellow or red sweet
pepper
3
cloves garlic, minced
1
tbsp olive oil
2
eggs, lightly beaten
3/4
cup milk
2/3
cup fine dry breadcrumbs
2
tsp Italian seasoning, crushed
750 gm ground lamb
V4
cup grated Parmesan cheese
1
recipe Garlic Butter,
right
1
cup bottled pasta sauce, wanned
Shaved Parmesan cheese
1
recipe Toasted Bread Crumbs,
right
Fresh Italian (flat-leaf) parsley
PREPARATION
1. Preheat oven to 375°F. Cook pasta
according to package directions; drain.
Rinse and cool completely. Halve three rolls
lengthwise; set aside. Use remaining roll
and prepare Toasted Bread Crumbs,
right.

In large non-stick pan cook onion, sweet
pepper, and garlic in hot oil over medium
heat for 5 minutes or until tender.

In large bowl combine eggs, milk,

the Toasted Bread Crumbs, V

tsp salt, and
Italian seasoning. With hands, fold in ground
lamb, cooked pasta, V

cup Parmesan cheese,
and cooked vegetables. Form in six 6><3-inch
oblong loaves (loaves will appear bumpy
rather than smooth). Place in shallow baking
pan.* Bake, uncovered, 25 minutes.

Spread split rolls with Garlic Butter. Bake
about 10 minutes or until golden brown. Top
each toasted roll half with warm pasta sauce
and a mini loaf. Sprinkle with shaved
Parmesan, remaining Toasted Bread Crumbs,
and snipped fresh parsley.
MAKES

Garlic Butter
In small non-stick pan cook 2
cloves of thinly sliced garlic and V
2
tsp dried
basil in 3 tbsp of butter until garlic is tender.
Toasted Bread Crumbs
Tear one roll in pieces
and add to food processor or blender. Process
or blend until coarse crumbs form. In 8-inch
non-stick pan, toast bread crumbs in 1 tbsp
melted butter over medium heat until lightly
browned. Remove

cup to add to the meat
loaf mix. Use remaining crumbs for topping
the meat loaves.
* If necessary, place loaves in two shallow
baking pans and rotate pans on oven racks
halfway through baking time.

WEEK NIGHT MEAT LOAF
WITH HERBED POTATOES
This Mediterranean-flavoured loaf is unique
because it’s easily patted into
a
square baking
dish and cooks faster. It’s denser than some of
the other loaves because it just has one eggfor
the one kilo meat.

INGREDIENTS

egg, lightly beaten

cup plain low-fat yogurt
1
medium onion, finely chopped
l/3
cup fine dry breadcrumbs
1
tbsp snipped fresh oregano
2
tsp snipped fresh mint
2
tsp finely shredded lemon peel
3
cloves garlic, minced
1
kg ground lamb
V3
cup crumbled feta cheese
2
tomatoes, thinly sliced
1
lemon, cut in thin wedges
V
2
a medium cucumber, cut up
Feta cheese (optional)

recipe Herbed Potatoes,
below
PREPARATION
1
. Preheat oven to 350°F. Line bottom of a
9x9«2-inch bakingpan with bakingpaper.

In large bowl combine egg, yogurt, onion,
bread crumbs, oregano, mint, lemon peel,
garlic, and V
2
tsp salt. Add meat and V3 cup
feta cheese. Mix to combine. Spread meat
mixture into prepared bakingpan, pressing
into the comers and shaping a flat top.
Arrange tomato and lemon slices on the loaf.

Bake 45 to 50 minutes. Spoon or pour off
fat. Letloafstand 10 minutes. To seme, cut
and top with lemon, cucumber, and mint.
Serve with feta cheese and Herbed Potatoes.

Herbed Potatoes I
n a bowl, combine 2 gm
small red-skinned potatoes and 2 tbsp olive
oil. Place potatoes in a bakingpan. Bake in
oven at 350° F for 45 mins. Remove from
oven. Sprinkle with 1 tbsp fresh rosemary, V
4
tsp salt and V4 tsp ground black pepper.

GREENS, EGG, AND
HAM LOAF
If prepared ahead, reheat by the slice in either a
microwave or non-stick pan. This loaf will be a
little pink even when fully cooked.
